🍛 Pav Bhaji – Your Style

🥦 Ingredients

Vegetables (for boiling):

• ½ eggplant (baingan)

• 2 potatoes

• ¼ cabbage

• ¼ cauliflower

• 2 carrots

• ½ cup peas

Masala base:

• 1 finely chopped onion

• 1 capsicum (finely chopped)

• 1 tomato (finely chopped)

• 6 garlic cloves (chopped)

• ½ lemon

Spices:

• 3 spoons

• Chilli powder (as per taste)

• Salt (as per taste)

• Dhaniya (coriander) powder

• 1 pinch red food colour

Cooking:

• 3 spoons oil

• 3 spoons butter

Garnish:

• Fresh coriander

• Butter

• Cashew

Serving:

• 2 pav (bread rolls)

👩‍🍳 Method

1. Boil Vegetables

• Boil eggplant, potatoes, cabbage, cauliflower, carrots, and peas until soft.

• Mash them using a masher or blend slightly.

2. Make Masala Base

• Heat a flat fry pan.

• Add 3 spoons oil + 3 spoons butter.

• Add onion, capsicum, and garlic → sauté well.

• After 10 minutes, add tomato and cook until soft.

3. Mash & Spice

• Mash everything directly in the pan while cooking.

• Add:

• Chilli powder

• Salt

• Dhaniya powder

• 1 pinch red food colour

• 3 spoons Pav Bhaji masala

4. Mix Vegetables

• Add the boiled mashed vegetables into the pan.

• Mix properly and mash again for smooth texture.

• Cook on low flame for 20 minutes, stirring occasionally.

5. Final Touch

• Squeeze ½ lemon juice.

• Add a little butter on top.

🍽️ Serving

• Serve hot with 2 butter-toasted pav

• Garnish with:

• Coriander

• Butter

• Cashew
